chipotle guacamole

by the way, those of you who don't have to drive 45 minutes to get to a Chipotle, count your blessings. i'm way jealous. i sent an email to chipotle.com a few months ago, telling them to put one in lacey, and they'd make a killing. i did get an actual reply back, but it was like, well, thanks, we'll consider that. um, how about build one here, oh, oh.

anyway, i made some guacamole from this copycat Chipotle recipe, and it turned out really good. it's not that difficult to make, either.

Description They make everything fresh. This Guacamole is no exception.

24 ripe avocados
1 1/2 C. red onion, minced
1/2 C. jalapenos, minced
3 cloves garlic, minced
1/2 cup lime juice
Salt
Methods/steps
Wash avocados. Cut in half and scoop out the meat into a large bowl. Partially mash the avocados. Add onion, jalapenos, garlic and lime juice. Mash together until well blended and fairly creamy in consistency. Salt to taste


(note: i should mention that i cut the recipe down to 4 avocados, and lo, it was plenty!! so don't use 24 unless you're planning to feed your whole ward at once...or the entire stake, maybe)

Almost Orange Julius®
Cool, creamy orange smoothie drink.

Prep. Time: 0:15
Serves: 2
6 oz. can frozen concentrated orange juice
1 cup milk - low-fat okay
1 cup water
1/4 cup granulated sugar
1 tsp. vanilla extract
8 ice cubes
-Pour all ingredients, except ice cubes, in a blender.
-Blend, adding ice cubes one at a time, until smooth.


my only difference is that i add 4 cubes in with everything, blend that, stop the blender, add the other 4 ice cubes and then blend that...i don't think it matters, but it does save me from splattering orange drink all over the kitchen, yo.

try it, it's delish!

almost 22 weeks along...and counting

mom's coming as i write. her plane gets in around 5pm. as you may guess, i'm rather excited about seeing her, since i thought that i wouldn't until la bebé comes. and speaking of that, we are having a girl, although most of you reading this already know that. she's very healthy and active, which i know firsthand as her muscles get stronger and she kicks harder. Gladys Herdman hits too hard. :)
we got to keep 7 or so pictures from the ultrasound last week...5X7's, too, and pretty nice quality. at one point during the hour-long ultrasound, she crossed her arms in front of her, as if to say, all right already, peeps, go away!! it was pretty funny. i was shocked that it's a girl, b/c i was absolutely convinced it was a boy. but a girl is lovely!! and i'm excited for her to come and wear seafoam green cute stuff! also, braden won me a baby kermit baby beanie-ish thing, and i'll give it to her when she's born. cuteness! or maybe i'll wait until she's a little older so kermit doesn't die a slobbery death. we'll see.

so i think i had some braxton hicks contractions yesterday, which was mildly disconcerting, since at first all i could think of was, this is exactly how Gina described labor to me!! but then they went away. when i read up on the subject, it seems that they can be felt as early as the 20th week, and dehydration and heavy exercise, including lifting, can contribute to having them. so there you go...i've had some strenuous days lately, because of shopping after thanksgiving, errands and especially trying to get the house cleaner for mom's coming. it's amazing how fast the house gets dirty if you don't have the energy to clean some each day. grr.

also, speaking of dehydration, we had an impromptu trip to the ER on Thanksgiving around 7pm, since i was having increasing abdominal pain that radiated downward. i had felt it the night before, but it wasn't as bad then, and it was really bothering me on Thanksgiving, to the point where i started to worry about the baby. i told braden and called mom to see what she thought, and she said to go to the ER just in case. it was one of those things where i probably wouldn't go in if it were just me, but i wanted to make sure that the baby was okay. so we were there for about 3 hours, and at the end, they said, um, well, we don't know what's causing the pain, but you're a little dehydrated, so drink lots of water, mmbye. um, thanks. well, we did get to listen to the baby moving around, since the nurse strapped this thing around me to listen to the baby's heartbeat. haha, she's so active that every time the nurse would get a heartbeat, it would fade away almost immediately b/c she kept moving. she's perfect for the ellis baseball team! :)
so anyway, i'm trying to drink more water, but i've never been much of a water drinker, and it's near impossible for me to drink as much as they're telling me to. so i just do the best i can.

what else?

it rains a lot here, in case you were wondering about the general state of the weather here in the northwest. we went to central WA last weekend (well, for about a day total from Sat to Sun) and when we were coming back, it rained constantly and for the next 2-3 days...and i'm talking downpour resulting in flooding. a couple of days since then we've had a couple few hours of sunshine, but never a day without at least some rain. bleh.

we were in central WA for david and gina's baby's blessing. david got some virus the night before and threw up like 6 times, so i'm amazed he gave the blessing. then again, it's not like the entire fam was there...NO PRESSURE! oh wait, a lot of pressure. basically, everyone had come out for that, so doubtless he would've liked to wait, but then the rest of the family wouldn't have been there. we were glad to see the baby in her cute dress. crazy to think that that will be us in another 4+ months.

we have the date set for our big ultrasound: nov. 20! woohoo!!

the baby is moving...or should i say that I can feel it now? i felt it on Wednesday morning and each morning thereafter. today braden felt it move, too, which is also exciting. i thought that there would be more time where only i could feel it, but i like it better that he can feel it, too, especially since then i know it's not gas!
